Chicken Enchilada's

Here is what you will need...

Chicken cooked and diced (2-3 chicken breasts)
2 or more cups of grated cheese (cheddar, tex mex or other.)
Dice green chilies (try work as well)
Onions (optional)
Package of Tortilla shells

2 cans cream of chicken soup
1 can broth
1 can milk
(You can substitute 2 cans milk or 1 milk 1 water instead of the broth.)

Mix soup, milk and broth (Slightly warm it to help it mix better)

Spray 9x13 pan with vegetable oil

Put thin layer of sauce in the bottom of the pan. Dip tortilla in sauce (cover both sides). Sprinkle chicken, small amount of cheese, onions and a few chilies on the tortilla. Fold Both end up and roll. Place in pan on top of sauce.

Bake 350 for 30-40 minutes until slightly brown. 5 minutes before eating sprinkle cheese on top.

Serve with salsa and sour cream.

Blueberry Cornmeal Muffins


This is what you will need...


1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup sugar, plus tsp for blueberries

1 1/4 tsp baking powder

1 tsp salt

1/2 tsp baking soda

1 1/2 cup buttermilk

1/4 cup milk

3 tbsp butter, melted and cooled

1 egg lightly beaten

2 cups blueberries

extra butter for the griddle

maple syrup


Whisk together flour, cornmeal, sugar, baking powder, salt and soda in a large bowl. Set aside. Whisk together buttermilk, milk, butter and egg in medium bowl. Add milk mixture to dry ingredients and whisk together just until combined.


Toss blueberries in a small bowl with 2 tsp of sugar. Heat griddle over medium heat. Take etra butter and run over surface of griddle. Repeat as necessary throughoout the process.


Pour batter on griddle 1/4 cup at a time, add some sugared blueberries to each pancake. Cook for about 3-4 minutes. Flip and cook the other side for about 2 minutes.


As you are making the pancakes, keep the finished ones on a cookie sheet in the oven at 200 degrees F to keep them warm.
